Currently when credit cards are swiped at a restaurant, a pre-authorization for the amount of the customer check takes place. The server later adds a tip amount and the total amount is processed at once.
But the new EMV chip & PIN cards do not allow a pre-authorization. So, this requires the entire sale with tip amount to be entered at the same time, in the presence of the customer.
